Mediterranean Roast Chicken

INGREDIENTS

  • 25g butter, softened
  • 2 tbsp chopped fresh thyme leaves + 3 whole sprigs, from
  • a pot of living thyme
  • 1 medium chicken, approx. 1.6kg
  • 300g new potatoes, sliced
  • 400g can cannellini beans, drained and rinsed
  • 75g chorizo, diced

This mediterranean roast chicken dish is infused with thyme and is a delicious alternative to your normal Sunday roast, especially in the heat of Summer. 

How to make mediterranean roast chicken:

  1. Preheat the oven to 200oC, gas mark 6.
  2. Mix together the butter and 1 tbsp chopped thyme. Loosen the skin over the chicken breasts with your fingers taking care not to tear it. Spread the thyme butter over the chicken breasts under the skin.
  3. Place the whole sprigs of thyme in the chicken cavity. Place in a roasting tin and roast for 1 hour.
  4. Drain away half the chicken juices then add the potatoes, beans, chorizo and remaining chopped thyme to the tray and roast for a further 30 minutes until the chicken is cooked throughout.
  5. Serve and enjoy!
