  • 4 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • A pinch of salt

How to Make a Lemon and Lavender Cake

1. In a small bowl, combine dried lavender buds with 1/4 cup of hot water. Allow it to steep for 15 minutes, then strain to extract the lavender essence.

2. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

3. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Add the dried lavender buds and mix well.

4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

5. Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.

6. Gradually add the dry ingredients to the wet ingredients, alternating with the addition of the lavender infusion and milk. Mix until just combined.

How to Make Lemon Buttercream

In a large bowl, beat together the softened butter, powdered sugar, lemon juice, lemon zest, and a pinch of salt until smooth and creamy. Place one cake layer on a serving plate and spread a layer of lemon buttercream on top. Place the second cake layer on top and frost the entire cake with the remaining lemon buttercream.
